Salmon with lemon juice and wasabi

This salmon recipe with lemon juice and wasabi, plus Worcester sauce, for its sweetness, comes from a great English chef (Gordon Ramsay) and it is very good but also comforting.

Ingredients

  • 4 teaspoons of lemon juice
  • a small piece of wasabi (half nail of your small finger)
  • 3 teaspoons of Worcester sauce
  • 1 teaspoon of olive oil
  • 1 small pinch of fleur de sel or coarse salt
  • 1 turn mill of Kampot black pepper
  • 100gr-150gr of salmon

Steps

  • Pre-heat the oven at 200°C
  • Put in a small bowl:
    • the lemon juice
    • the olive oil
    • the wasabi
    • the Worcester sauce
    • salt and pepper
  • Emulsify everything with the whisk
  • Cover the salmon with the sauce
  • Add salt and pepper
  • Cook for 20’-25’
  • Serve with one or two small potatos cooked with steam or simple boiled

Tip

In order to have wasabi always at home, I buy it in ground form and then prepare it with a bit of hot water.

This wasabi, I found it at the Grande Epicerie de Paris.
