Salad with baby spinach, strawberries and feta cheese

This is a delicious and surprising salad with baby spinach, strawberries, pecans and feta cheese! The sauce is made with balsamic vinegar, honey, olive oil and rosemary and contributes a lot to the success of this salad which will become one of your favorites! Just give it a try and see :-)

Ingredients

  • 3-4 handful of baby spinach
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of olive oil
  • 1 + ½ teaspoon of honey
  • 1 teaspoon of rosemary (finely chopped)
  • 20gr of pecans
  • 80gr of strawberries
  • 30gr of feta cheese
  • 2 pinches of fleur de sel  or coarse salt
  • 5 turn mills of Kampot black pepper

Steps

  • Wash and drain the baby spinach
  • Add the baby spinach into a salad bowl
  • In a mortar, add:
    • the balsamic vinegar
    • the olive oil
    • the honey
    • the rosemary
  • Use the pestle to emulsify everything together and crash the rosemary
  • Place on top some plastic wrap and let it rest for 10’
  • Place the pecans into in a single layer
  • Let them roast for 10’
  • Take the pecans out of the oven and let them cool
  • Wash and remove the greens from the strawberries
  • Slice them in half on the vertical axis
  • Slice each piece of strawberry into slices of half-moons
  • Add the strawberries into the bowl
  • Sprinkle the feta cheese on top
  • Slice the pecans in small chunks using a knife
  • Sprinkle the pecans on top of the other ingredients
  • Emulsify the sauce again
  • Pour the sauce onto the salad
  • Toss everything together
  • It’s really good!
