Soup with strawberries, balsamic vinegar and feta cheese

This is a fine soup made with strawberries and feta cheese, and with a sauce made with balsamic vinegar and coconut syrup! You can see that it’s wonderful in photos but also taste it once you make it ;-) The mix of feta cheese with strawberries is very nice, and the sauce brings some salty sweetness to the soup! Give it a try, it’s easy and quite original!

Ingredients

  • 245gr of cold strawberries (or 230gr without the green parts)
  • 30gr of feta cheese
  • 1 tablespoon of balsamic vinegar
  • 2 teaspoons of coconut syrup
  • 1 teaspoon of olive oil
  • 2 pinches of fleur de sel  or coarse salt
  • 3 turn mills of Kampot black pepper

Steps

  • Wash and remove the greens from the strawberries
  • Drain them gently with some paper towel
  • Use a stick blender to mix well the strawberries and create the soup
  • Dans un bol, ajoutez :
    • the balsamic vinegar
    • the olive oil
    • the coconut syrup
    • salt and pepper
  • Stir well using a whisk
  • Pour the soup into a plate
  • Sprinkle the feta cheese on top
  • Pour the sauce and stir with a tablespoon
  • Taste it asap!
  • A pure marvel ;-)

Tip

You should use all the feta cheese even if in the photos you see less quantity; I used less feta cheese to make the photo looking better but the soup needs more feta cheese ;-)
