Fish and shellfish gain a high importance to my diet only recently. The starting point was as always Weight Watchers that push and reward people when eating them, but I had to find new ways of cooking them because as a Mediterranean girl, and more precisely a Greek girl, fish was grilled in the oven with a bit of lemon and oregano (with the exemption of salmon)! So I started looking at French recipes but there was a lot of butter in them and this was not possible for me, it was even unthinkable. And then a miracle happened, I visited a couple of years ago a region in France call the Sud-Ouest (South-West), and I discovered a lot of new different kind of fish and new ways to cook it. Since then, I prefer to eat fish and shellfish whenever I can :)
Sole filets with cognac and French Comté or gruyere
Sole filets with a cheese filling (French Comté or gruyere) and a sauce made with heavy cream and cognac (maybe brandy will be ok too) :-) It’s delicious, cooked in the oven, super easy and quick!
Stuffed Squid
This stuffed squid is stuffed with rice, onion and red pepper and it’s seasoned with Cayenne pepper to bring some extra force into it! It’s cooked in the oven with white wine and lemon and it’s very good and light!

Scallops with citrus fruits, coconut, curry and lemongrass
These scallops are served with an extraordinary sauce! It’s made with mandarin and orange juice which is infused with curry and lemongrass and of course coconut milk! It’s really extraordinary and the scallops are cooked with some orange zest for extra flavor!
Shrimps “saganaki” with feta cheese and tomato sauce in the oven
This Greek dish with a Japanese name is really good and original! The shrimps are cooked into a tomato sauce with fresh tomatoes, green peppers, onion and garlic and then feta cheese is added and it’s cooked in the oven! It’s very tasteful and really worth the effort making it!
