Desserts are simply my own “cute” sin, as the French say! Fat? I learned to manage! But making good desserts without a lot (or enough) butter and also manage efficiently sugar… it’s a challenge by far more difficult because life without desserts, it’s not called life!
I try though to make the best light desserts I can, but the domain where I excelled, is learning how to manage quantities! And this was a very difficult task but it was worth the try because I am not obliged to renounce to my sin :) And a sin that is “cute”, it’s no longer a sin :)
Fraisier with sponge fingers or ladyfingers and pistachio paste by Christophe Felder
This is an amazing French dessert called fraisier but in this version the biscuit is made with sponge finger (or lady finger) biscuit and this makes all the difference. It’s filled with a wonderful cream flavored with pistachio paste and of course strawberries! It’s a wonderful dessert coming from the Great Pastry French Chef Christophe Felder!
Rice pudding with soft spices
A rice pudding with soft spices (cardamom, cloves and cinnamon) that is very moist, sweet and tasteful :-) It also has some coconut milk and a little bit of mascarpone to bring everything together marvelously!
Danish Pastry
This recipe contains two types of Danish pastry: one in form of a star and with a filling of brown sugar (or rapadura sugar if you can find it), orange and cinnamon, and a second one in form of small snails with a caster sugar filling and some apricot jam on top! Both recipes require your attention and time but the result is so good that it simply worth it!
Splendid Pineapple!!!
A delicate and quite easy dessert with pineapple cooked in the oven and a lemon cream called chiboust :-) It also has a lemon crumble made with almond power with gives it a little bit of crunchiness! It’s really good and worth the effort!
Christmas Bûche with a strong twist of hazelnut praline!
A wonderful Christmas dessert that changes from what you know! It has a strong taste of caramelized hazelnuts and some wonderful butter cream all around but also in the inside! Give it a try, it’s a traditional French dessert for Christmas!
Greek biscuits for Christmas and the New Year with roasted almonds and spices (kourabiedes)
The kourabiedes are traditional Greek treats for Christmas! They are thick biscuits made with butter and flour and have some roasted almonds as well :-) This version has also some spices (cinnamon and cloves) and that’s why it’s so special! The confectioner’s sugar on top give a slight extra sweetness and it’s wonderful!
