These wonderful endives (or chicory) braised in honey are very slightly bitter and a bit caramelized! They are a great side dish for scallops and they are very easy to make! Try them as a light and very tasty side dish even with veal or poultry!

Ingredients
- 2 endives (or chicory) of medium size
- 10gr of unsalted butter
- 1 tablespoon of liquid honey (*)
- 50ml of hot water
- ½ teaspoon of fleur de sel or coarse salt
- 5 turn mills of Kampot black pepper
Steps
- Wash the endives (or chicory) and remove the leaves on the outside if they are a bit old
- Slice the endives in two and remove their heart with a knife because it tends to make them bitter
- Add the liquid honey into the hot water and stir
- Heat-up a pan
- Add the butter and once it’s hot enough add the endives
- Cook slightly the endives until the caramelize a bit on every side
- Once the endives are caramelized add the hot water with the honey
- Add salt and pepper
- Put the lid on and cook in medium heat for 20’
- At the end of cooking time endives will have a nice color and will be quite caramelized
- Serve the endives as a side dish of scallops with citrus fruits sauce (Scallops with citrus fruits sauce the Scallops with citrus fruits, coconut, curry and lemongrass)
- Enjoy!
(*) If the honey becomes a lit hard just heat it up in a small casserole and it will become liquid again
