Green salad with melon, apricots and rosemary

This is a very nice salad and it’s simply marvelous for summer time :-) Cold melon is the perfect match and apricots provide their delicacy to the salad :-) Rosemary gives its characteristic perfume to the sauce without being too intrusive! On top of all, you will have pistachio pieces which bring their crunchiness and create with the rest of the ingredients and incredible symphony of savors! Just try it and you will see :-) Your turn!

Ingredients

  • 3 pinches of mesclun and some leaves of red oak leaf salad
  • 2 teaspoons of olive oil
  • 1 teaspoon of white balsamic vinegar
  • ¼ a melon of medium size and very cold
  • 2 small apricots
  • 1 tablespoon of shelled pistachios
  • ½ teaspoon of rosemary
  • 2 pinches of fleur de sel  or coarse salt
  • 7 turn mills of Kampot black pepper

Steps

  • Wash and spin the salad until dry
  • Place it in a bowl
  • Use a knife to slice the pistachios in rough pieces and quite small in size
  • Use a Parisian spoon to cut small balls of melon, if you don’t have a Parisian spoon, cut the melon in quite small cubes (not very small though)
  • Slice the apricots in dices that have a similar size as the melon balls or dices
  • In a mortar add:
    • the olive oil
    • the vinegar
    • the rosemary
  • Crash everything together until the rosemary releases its perfume and pass it over to the sauce
  • Pass the sauce through a sieve to retain the rosemary brunches
  • Wash-up the mortar and pour the sauce in it
  • Add salt and pepper
  • Stir everything together
  • Add the melon and the apricots into the salad bowl
  • Toss everything together using 2 tablespoons
  • Pour the sauce on top and toss again until it covers all ingredients
  • Sprinkle on top the pistachios and toss again
  • Serve asap! It’s simply marvelous :-)

Tip

Fruits should be very ripe and melon very cold in order for the salad to be nice and good :-) Make sure of this and you will have a fine salad in your hands for all summer :-) Your turn and don’t miss it ;)
