I have learned to eat endives (or chicory) here in France and it took me a great while until I started doing so. I found them bitter and I did not like them. All this until the moment I discovered recipes that exploit this bitterness to produce a final result that is delicate and tasty at the same time.

This is a simple velouté made with chicory (or endives), potatoes and some curry! It’s so delicious and easy to make that it will keep you company during winter ;-) But if you chill it, you can have if as a cold soup as well during summer ;-)
