Veggies are the star ingredients of a diet, and this since the dawn of time. But vegetables are not here only for diets; they are also here to make our lives healthier, to give us strength, to make our skin and our heart better; but also to surprise us with the variety of their recipes and their light character especially when they are cooked without a lot of fat and when they are eaten in reasonable quantities because as my ex-coach Weight-Watchers used to say: “an elephant eats only salads and weighs 5 tons” :-)

These eggplants are a Greek traditional dish but here we have its light version! The eggplants at the end are candied and their filling has also candied onions cooked in a tomato sauce! Veggies become candied thanks to the long cooking in the oven! It’s really good and light because they don’t have much olive oil! Give it a try and you will adopt the recipe without a question!

These runner beans are really simple to make in their tomato sauce with onion and parsley! It’s light, easy, and quick to make! It’s perfect for a summer meal when you can find them fresh or even in winter if you use frozen! It’s really simple and good!

Frittata with spinach, leeks and feta
As you might know the frittata is an omelet cooked in the oven and it’s really good! This version has leeks, spinach, onions, cream and cheese (feta and gruyere or French comté)! It’s perfumed with dill and has the taste of a spanakopita (a Greek pie with spinach) without the phyllo crust! It’s really good and quite easy to make!
